Pokeworks Returns to San Antonio with New Medical Center Location
Pokeworks is set to re-enter the San Antonio market with a new location at FredMed Plaza, strategically situated near the city’s bustling Medical Center. The fast-casual poke chain plans to begin construction on February 16, 2026, with an anticipated opening by May 16, 2026. This new outpost will occupy approximately 2,100 square feet at 4343 Medical Drive, featuring its signature offerings, including build-your-own bowls, sushi burritos, and Hawaiian-style hot plates.
The announcement comes as part of a broader expansion effort by local franchisee Agustin Guzman, who has committed to opening multiple Pokeworks locations around the Alamo City. According to a state filing with the Texas Department of Licensing and Regulation, the project, designated as TABS2026011106, outlines a renovation budget of approximately $300,000. The tenant for this project is listed as Guzma Tex, LLC, while FredMed, LLC holds ownership of the property.
This new San Antonio location marks a significant step in Guzman’s multi-unit agreement to develop up to ten Pokeworks locations in San Antonio and the Rio Grande Valley. Guzman currently operates a Pokeworks restaurant in McAllen and is working on another in Mission, further solidifying the brand’s growth in Texas.
Situated on Medical Drive near Fredericksburg Road, FredMed Plaza benefits from a high volume of foot traffic due to its proximity to numerous hospitals and clinics. This area is known for its dense mix of medical and retail establishments, providing a strong customer base for quick-service dining options. Leasing materials highlight the plaza’s appeal, noting substantial annual patient visits that contribute to the success of nearby businesses.
Founded in 2015 in Manhattan by Mike Chen, Mike Wu, and Peter Yang, Pokeworks gained traction through a viral marketing campaign that featured its now-famous sushi burrito, which garnered over 50 million views. The brand has since expanded its footprint to over 70 locations across the United States, Taiwan, and Canada, with ongoing efforts to secure additional franchise agreements.
Contrary to some local reports suggesting that the FredMed Plaza location would be Pokeworks’ first in San Antonio, the chain previously operated a site at The Shops at La Cantera, which opened in 2018 but has since closed. Thus, the FredMed Plaza project represents a return for the brand to the local market rather than a debut.
If the construction timeline remains on track, Pokeworks is poised for a spring opening at FredMed Plaza. While Guzman has confirmed the planned rollout to local media, he has not disclosed an exact public opening date. As of now, neither Pokeworks nor the plaza’s management has provided additional comments regarding the upcoming location.
