Northeast Ohio Chef Daniel Bolaños Joins James Beard Legacy Program
A Northeast Ohio chef has been selected for the prestigious James Beard Legacy Network Program, making him one of only ten chefs chosen nationwide for this year’s cohort. Daniel Bolaños, the chef and owner of the virtual restaurant concept Saed (pronounced “seed”), will participate in the 12-week mentoring initiative designed to enhance leadership skills within the culinary industry.
Founded in 2021 by the James Beard Foundation, the Legacy Network Program aims to support individuals from underrepresented ethnic backgrounds in the culinary field. Starting on January 12, 2024, Bolaños will engage in virtual mentorship with an experienced chef as well as collaborate with other participants to cultivate his professional growth.
Chef Bolaños’s Journey and Vision
Originating from Painesville, Ohio, Bolaños expressed his enthusiasm for the opportunity, stating, “One of my goals is to be mentored by a James Beard-award winning chef and learn how to become one. I want to get involved with the James Beard Foundation and learn to grow this business.” His passion for culinary arts has been evident since he graduated from the culinary program at Cuyahoga Community College.
Before launching Saed, Bolaños honed his skills at various restaurants in the Cleveland area, including Wolf Pack Chorus in Cleveland’s Little Italy, which closed its doors in 2025. Saed specializes in world-inspired cuisine and new American brasserie-style dishes, offering curated dining experiences that range from intimate baby showers to large family gatherings.
“We do custom menus to meet our clients’ needs and expectations,” Bolaños shared, emphasizing his commitment to providing personalized culinary experiences. His long-term ambition is to operate a farm-to-table restaurant and culinary venue that reflects his culinary vision.
A Commitment to Culinary Excellence
With his Hispanic heritage—his father is from Guatemala—Bolaños brings a diverse perspective to the culinary landscape of Northeast Ohio. His selection for the James Beard Legacy Network Program not only highlights his talent but also underscores the program’s commitment to nurturing culinary leaders from diverse backgrounds.
Bolaños’s participation in the program represents a significant milestone in his career. “It’s a great opportunity. I’m honored and humbled to be a part of it,” he remarked, capturing the sentiment that drives many aspiring chefs. As he embarks on this new chapter, the culinary community watches with anticipation for the impact he will make through his innovative approach and leadership potential.
