Families Discover Maple Sugaring Process at Gring’s Mill

Families gathered at the Gring’s Mill Recreation Area in Spring Township on February 28, 2026, to explore the art of maple sugaring during an educational demonstration hosted by the Berks County Parks and Recreation Department. Approximately 50 participants, including Sarai Santiago and her family, learned about the intricate process of turning sap into syrup.

During the event, eight-year-old Sarai Santiago sampled what she initially thought was water, only to discover it was raw sugar-maple sap. Her mother, Francisca Torres, encouraged her to taste it again, leading to a realization of its subtle sweetness. The family learned that it takes around 40 gallons of sap to produce just one gallon of syrup, highlighting the effort involved in the process.

Participants observed the syrup-making journey firsthand. They started by identifying sugar-maple trees, witnessing a tree being tapped, and then watching as sap was boiled down to create syrup. According to Lisa Gauker, recreation programs superintendent, sugar maples are the most effective trees for syrup production, containing approximately 2% sugar compared to other species that only yield about 1%.

Gauker explained, “It takes eight of these heavy, heavy buckets filled with sap to make 1 gallon of syrup.” She demonstrated this by holding up a five-gallon bucket, emphasizing the significant amount of sap required from different types of maples. The optimal conditions for sap tapping involve nighttime temperatures falling below freezing and daytime highs reaching the upper 30s to lower 40s Fahrenheit, which creates the necessary pressure changes for sap flow.

Once collected, sap must be boiled for roughly six hours to evaporate most of the water content, transforming it into syrup. Families assisted recreation program assistants in identifying sugar maples by examining their bark and branching patterns. Participants watched as Kevin Bonmer, a recreation assistant, drilled into a tree and inserted a spile to collect sap.

Back in the barn, attendees enjoyed mini pancakes topped with freshly made syrup. “It is sweeter than store-bought syrup,” noted Francisca Torres, as her family agreed with her assessment.

Beyond the delicious outcome, the maple sugaring program aims to foster environmental appreciation. Gauker stated, “This is not just a fun homesteading thing to do. This is also about an appreciation of nature, getting outside and sustainably interacting with our trees.” The initiative, which has been running for over a decade, encourages participants to engage with nature and cultivate a deeper understanding of their environment.

The cultural significance of maple sugaring was also highlighted during the event. Gauker shared that the tradition has roots in Native American practices, with many tribes telling stories about how syrup was once harvested directly from trees until deities diluted it with water. This tale underscores the importance of stewardship and effort involved in syrup production.

For families like Torres’s, the event provided an opportunity to bond while learning something new in the great outdoors. Melinda Ruiz, an active participant in seeking educational activities for her family, expressed satisfaction with the experience. “We were cooped up all winter long, and we were itching to get out,” she said. “I found this, and we thought ‘Why not?’ It was a nice experience. We enjoyed ourselves.”

With the combination of hands-on learning, cultural education, and family engagement, the maple sugaring demonstration at Gring’s Mill continues to be a cherished winter tradition for the community.
