Cabbage’s aesthetic appeal has been showcased in various forms, from clothing designs to restaurant menus in New York City. Notably, NYC Mayor Zohran Mamdani featured a cabbage in a recent campaign video alongside food content creators Anna Archibald and Kevin Serai, known as “Cabagges” online. Such endorsements highlight the vegetable’s newfound prominence in modern culture.

The growing interest in cabbage is backed by data from the “Pinterest Predicts” trend report, which labels cabbage as the “new kitchen MVP” for 2026. Searches for recipes like “cabbage dumpling” have spiked by 110%, while “cabbage alfredo” and “fermented cabbage” have seen increases of 45% and 35%, respectively. This surge suggests a collective craving for more crunch and variety in meals.
According to Celine Beitchman, Director of Nutrition at the Institute of Culinary Education in New York, cabbages resonate with many people due to their economic viability and comfort food status across various cultures. “They are an economical option, but they are also a comfort food for just about every culture worldwide,” Beitchman explains. Cabbages are a cornerstone in dishes around the globe, such as Polish Gołąbki, Ukrainian holubtsi, and German kohlrouladen.
Despite its versatility, cabbage consumption in the United States has declined in recent years. Data from Statista indicates that per capita consumption fell from nearly 9 pounds in 2000 to just 5.51 pounds in 2023. However, some signs of recovery are evident, as recent surveys show a slight increase in interest, with 37.3% of consumers purchasing cabbage within the last year, compared to 31% in the previous year.
Health Benefits and Economic Factors
Cabbage’s appeal also lies in its nutritional profile. Rich in Vitamin C and folate, cabbage plays a vital role in supporting cellular health. Beitchman notes that it is high in water and insoluble fiber, which promotes digestive health. With a growing awareness of dietary fiber’s importance, cabbage fits perfectly into the emerging trend of “fibermaxxing,” where individuals aim to increase their fiber intake.
The affordability of cabbage makes it a preferred choice for budget-conscious shoppers. Current prices for heads of green cabbage range from $2.13 to $2.70, allowing families to prepare meals that are both nutritious and economical. “You can do a lot with one head of cabbage,” Beitchman emphasizes, noting its versatility in various recipes.
As fermented products gain traction in the American diet, cabbage’s role in dishes like sauerkraut and kimchi has become increasingly relevant. According to NielsenIQ, sales of fermented foods reached $61.17 billion between 2024 and 2025, highlighting a shift toward improving gut health among consumers.
Cabbage’s moment in the spotlight appears to be a convergence of economic necessity and culinary creativity. As home fermentation becomes more accessible and diverse cabbage varieties are made available at local farmer’s markets, the humble vegetable is poised for a significant resurgence.
