The Culinary Institute of America (CIA) is considering expanding its reach to Jacksonville, Florida, following preliminary discussions with city officials. The mayor’s office has confirmed these talks, indicating the prestigious culinary school is evaluating the prospect of establishing a campus in what is being referred to as the Bold City of the South.

Chef Derek Shroyer, a CIA alumnus from the class of 1997, initially expressed skepticism about the potential move. He noted, “I just kind of thought there could be other cities in Florida that would make more sense monetarily.” However, after reflecting on the possibilities, his stance shifted to one of enthusiasm. “After like, being puzzled, I was very excited about it,” he added.

Potential Impact on Jacksonville’s Culinary Scene

Currently headquartered in Hyde Park, New York, the CIA has successfully expanded to locations in California, Texas, and even Singapore. Chef Shroyer now works at BB’s Restaurant and Bar in San Marco, where he applies the skills he acquired at the CIA on a daily basis. He emphasized the dual focus of the institute, stating, “What is really good about that school is it’s kind of like a business school also.”

Shroyer believes that a new campus in Jacksonville could significantly enhance the city’s dining landscape and enrich the local talent pool. “It would be so nice just to have just a ton of kids to be able to employ that are like, one, passionate about food, cause you can’t really buy that. That has to be driven into somebody,” he explained.

The potential establishment of a CIA campus could also be a catalyst for economic growth in the area. Shroyer referenced the school’s successful expansion into San Antonio in 2007, which was supported by a substantial donation from a local philanthropist. He suggested that a similar financial commitment would likely be essential to realize a Jacksonville campus, asserting that “it would be money well spent.”

The CIA has not publicly committed to any plans, stating that conversations regarding the Jacksonville expansion are still in the early stages. A representative indicated that it would be “premature to comment on them.”
