New Steakhouse Stock & Bond Opens in Historic Minneapolis Venue

A new dining experience is set to debut in downtown Minneapolis as the Stock & Bond steakhouse prepares to welcome guests on July 31, 2023. Located in the renovated space of the former Farmers and Mechanics Savings Bank, the steakhouse aims to blend history with modern American cuisine. Tom Dillon, of the New York-based Apicii hospitality group, opened the first Stock & Bond in Oklahoma City three years ago but felt a calling to expand into this iconic venue.
Dillon expressed enthusiasm about the restaurant’s location, stating, “I wasn’t really looking to do another Stock and Bond. But when I walked into the lobby, I thought it’s rare that you get a space with this much history behind it.” The original bank, built in 1942, provides a unique backdrop that enhances the restaurant’s ambiance.
Revamped Dining Experience
After a multimillion-dollar renovation, Stock & Bond emphasizes American craftsmanship in both food and design. General Manager Craig Stuck, previously with D’Amico’s Continental American Provisions in Naples, Florida, is excited to return to Minnesota for this venture. He commented, “I love beef as a passion, whiskey as a passion. So this is hitting all my passion points that I’m going to feel very proud of maintaining every day.”
The restaurant’s design reflects a departure from the former Bank’s monochromatic aesthetic, embracing vibrant, textured, and art deco elements. The updated space spans 8,300 square feet and accommodates 250 guests. It features a sleek bar, semi-private lounges, and private dining rooms, all enhanced by the work of artist Aaron Petz, who created a striking mural that references the building’s banking history.
Culinary Highlights and Pricing
Executive Chef John Sobojinski, a Minnesota native with experience in renowned kitchens, leads the culinary team. His menu includes classic Stock & Bond dishes alongside new creations like roasted sage chicken. The restaurant sources its Heritage Angus beef from the Linz family ranch in Oklahoma and wagyu from Fellers Ranch in Conger, Minnesota.
The initial offerings will focus on breakfast and dinner, with plans to introduce lunch services shortly after opening. Stuck emphasized the goal of restoring the power lunch culture in downtown Minneapolis, which has declined in recent years. Menu prices range, with starters starting at $15 and steak entrees reaching up to $105 for an 18-ounce prime rib-eye. Breakfast items will range from $6 for pastries to $32 for steak and eggs.
Bar Manager Ross Nelson is curating an extensive selection of American whiskeys, bourbons, and ryes. The initial lineup includes 350 varieties, with plans to expand to over 1,000, aiming for recognition among the country’s top whiskey lists. Cocktails will feature unique combinations, such as the Bonded & Washed, which incorporates beef tallow-washed rye, alongside refreshing options like the Kentucky Maid.
Stock & Bond will also offer a variety of wines from regions like Napa and Sonoma, complemented by a selection of local and regional beers. Prices for cocktails will range from $17 to $26, with wines by the glass priced between $14 and $25.
As the opening day approaches, the Stock & Bond steakhouse promises to provide a distinctive dining experience that honors both its historic setting and contemporary American cuisine. Located at the Westin Minneapolis, 88 S. 6th St., guests can expect an inviting atmosphere that merges luxury with local flavors.
